Halloween Special! Three ways with pumpkin

With pumpkins going for as cheap as a pound at Nisa, it’s really easy to get creative with this seasonal special. Here’s three ways:

1. Pumpkin soup

This is one of my favourite things to eat around Halloween. Simply add some stock to a pan of boiling water and combine with chopped pumpkin. Stir in two tablespoons of cream and a sprinkle of salt. Heat for a little longer and then blend.

2. Pumpkin Muffins

To make pumpkin muffins for 12 people, you will need 200g plain flour, 165g caster sugar, half teaspoon baking powder, half teaspoon bicarbonate of soda, half teaspoon salt, 30g butter, 275ml milk, 2 eggs and 265g pumpkin puree. Preheat the oven to 180C/Gas 4. Line 12 paper muffin cases in a baking tray. In a large bowl, mix the eggs, sugar and milk. Soften the butter and add to the mixture. Sift the flour, baking powder and salt into the bowl. Combine with the pumpkin. Fill each muffin cases with two or three tablespoons of the mixture. Bake for half an hour in the preheated oven until golden.

3. Pumpkin Martini

Spice up your usual Martini with pumpkin liqueur. Mix 3 parts of your favourite vodka with half part pumpkin liqueur and a dash of sugar syrup.
